Whole30 General Tso’s Chicken:
The Chicken:
2 pounds chicken breasts
2 pounds chicken breasts
2 cups Coconut Flour
1-2 Eggs
1/2 cup Compliant Almond Milk
The Sauce:
2 cups Almond Flour
1 tsp. Coconut Oil
1/4 cup water mixed with one scoop of collagen
2 T Coconut Vinegar or Rice Vinegar
2 T Coconut Aminos
1 T Red Curry Paste
1/2 tsp Pure Stevia (Or 3 pureed dates), or more, to taste
Pinch of Ginger
Directions:
For the chicken: Chop chicken breasts up into bite-size pieces. Coat baking dish with cooking oil and preheat your oven to 425.
Bread the chicken nuggets by coating it in the coconut flour first, then the egg wash (the eggs + almond milk) and end up with almond flour.
Bread each piece, then place in the baking dish. When coated, bake the chicken for approximately 10 minutes, until cooked through and the outsides start to brown.
Making the sauce: Combine all sauce ingredients in a small saucepan over medium-high heat. Whisk for 3-5 minutes until the sauce has thickened.
Remove from the heat.
Serve the chicken with the sauce, and pair with broccoli or cauliflower rice. Enjoy!
