During the hot days of summer, all I can think of is cold food. Hot pizza? No way, but this is the kind of pizza you could eat on a hot day.
Making sure you stay hydrated is essential for good health. Did you know that some foods can actually hydrate you better than water? That’s good news for those of you who find it hard to get 8 glasses of water in a day!
Watermelon is one of those foods. It’s 92% water and only 8% sugar. Plus, it contains essential rehydration salts, calcium, magnesium, potassium and sodium.
So, have a slice or two when you are feeling thirsty!
This watermelon pizza has a base of coconut yogurt, and any toppings will work. We used blueberries, coconut flakes, raspberries, almond slices, and mint leaves.
This works as a treat as well-a refreshing snack and so pretty too!
Watermelon Pizza

INGREDIENTS
1 small watermelon
1.5 cups plant-based yogurt (we used coconut yogurt)
Fresh raspberries and blueberries
Almonds
Toasted coconut flakes
Fresh mint leaves
Directions
- Wash the watermelon and cut into 2 cm or 1 inch thick rounds.
- Top each round with a scoop of yogurt, and spread it so that it almost reaches the rind.
- Add desired fruits, nuts, seeds, and whatever toppings you want!
- Cut each pizza into 6 or 8 slices, and enjoy!
