Hey you peeps! I had to step back for a couple of days to rest aaaaaand celebrate my birthday!! Woot! Woot! It was a great three day weekend filled with time with family, good food, and some “me” time. I also had a goal to make some changes and make sure I begin them by the time my birthday rolled around and now that it has, I’m ready! I’ll be sharing them with you in the next couple of weeks, but until then, I wanted to talk about our topic for today…

Avocado was another one of those foods (like lemons), that I would not touch with a ten foot pole. But, now that I’m a nutrition nerd, I became fascinated with all the great things that avocados do for a body:

Prostate Cancer

Avocados can inhibit the growth of prostate cancer.

Oral Cancer Defense
Certain compounds in avocados are able to seek out pre-cancerous and cancerous oral cancer cells and kick them in the butt without harming healthy cells.

Breast Cancer Protection
I love the fact that avocado is high in oleic acid, which has been shown to prevent breast cancer.

Eye Health
Move over carrots! Avocados have more of the carotenoid lutein than any other commonly consumed fruit. Lutein protects against macular degeneration and cataracts.

Lower Cholesterol
Avocados are high in beta-sitosterol, which can lower cholesterol levels.

Heart Health
One cup of avocado has 23% of the recommended daily value of folate. Vitamin E, monounsaturated fats, and glutathione in avocado are excellent for  your heart.

 Even with all those wonderful benefits, I still couldn’t bring myself to just eat them plain. So, I had to take those little guys into the kitchen and experiment with them. Yes, there’s guacamole, but I wanted to do something different like a sweet snack. I experimented with all sorts of ingredients and decided on a dip/spread that I could use in different ways.  Yum!

Here is an easy avocado recipe that can be used as a spread on morning toast, a dip for crackers (try gluten free!) even add a couple of spoonfuls in your smoothie!

Sweet Honey Avocado Cream
Ingredients
  • One Avocado
  • 1 tablespon of Apple Cider Vinegar
  • Honey-to taste
  • 1 tablespoon of Water
  • 1 tablespoon of coconut oil
Instructions
  1. Simply scoop the avocado out of its skin and place in food processor with other ingredients until smooth. That’s it!
