Salmon Patties on Eureka bread + a Giveaway

Seafood and I get along brilliantly.

I love all the benefits that eating seafood gives you; especially salmon. Salmon is an excellent source of vitamin B12, vitamin D, and selenium. It is a good source of niacin, omega-3 fatty acids,protein, phosphorus, and vitamin B6. It is also a good source of choline, pantothenic acid, biotin, and potassium. 

In other words, IT ROCKS!

So, our family eats a lot of  wild caught salmon-yes, that is better than farmed fish. One thing I noticed was that my family was getting tired of eating it the same boring way, so I decided to create a new way to eat it.

 I came up with a delish Salmon Patties recipe that’s  very basic, simple simply out of this world!  I love crab cakes and this taste just as good to me. You will love how easy this is to whip up at a moments notice!

We served them on a slice of eureka bread-this bread is organic and certified vegan for those who want vegan.

The size of the slices were big enough to handle my bad boy patties. The density of this bread is really nice and thick, which is excellent as it prevents condiments or other spreads from leaking through. The texture  wasn’t too soft or too hard, which helps since some taste almost stale.

Salmon Patties on eureka bread + a Giveaway
Serves: 10
Ingredients
  • 2 wild caught salmon-baked
  • 3 eggs
  • 2 Tablespoons lemon juice
  • 1 teaspoon mustard
  • 2 teaspoons dried dill
  • 1/2 teaspoon salt
  • 1/4 cup coconut flour
  • 2-3 teaspoon of coconut oil
Instructions
  1. Heat a cast iron skillet or flat bottomed skillet on medium heat. drop in 2-3 teaspoons of coconut oil.
  2. Meanwhile, crumble up salmon with a fork and then put into food processor. Add eggs, dill, salt, coconut flour, lemon juice and 3 eggs. Pulse several times to mix thoroughly.
  3. Patty up mixture and drop by 1/2 cup servings into the hot pan. Cook a few minutes on each side, until golden brown.
  4. (optional) Top with sauce of choice and eat on bread of choice.
