I ALMOST FORGOT.
It was that time of the year again, where making everything green is good.
Green food.
Green clothes.
Green hair.
But, most important…SHAMROCK SHAKE!
How could I of forgot my favorite vice, MCDonald’s Shamrock shake?!? Now, I don’t actually go to there and get the real thing anymore. If you knew what was in those shakes, you probably wouldn’t ever look at it the same way again. It’s basically full of carcinogens and a whopping 115g of sugar!
But, it is delicious, (lower lip sticking out) and that’s a fact.
When I changed my way of eating, I didn’t think about how I would survive giving up this tasty goodness. That was until I hunted around the net and realized that I didn’t have to give it up. I just needed to be smart about it.
So, after trial and error, I have a new favorite (I could make it all year round, but I like to keep it a St. Patty’s Day tradition). I’ve even included collagen in it as well! All you need to do is blend full-fat canned coconut milk, avocado, vanilla extract, mint extract, One scoop powder collagen, ice cubes and sweeten to taste.
You won’t even have to use any form of artificial colorings! Yellow no. 5 (part of the green dye) is a serious allergen that has been tied to hyperactivity in children. The avocado works just fine to give a natural green.
Paleo & Keto Shamrock Shake + Collagen
INGREDIENTS
- 1 cup full-fat coconut milk
- 1 medium avocado
- 2 teaspoons vanilla extract
- 1 scoop of powdered collagen (I only use this)
- 1/4-1/2 teaspoon mint extract to taste
- 2-4 tablespoons erythritol or sweetener of choice, to taste
- 1 cup ice as needed
- water as needed

Add coconut milk, avocado, vanilla extract, collagen, mint extract, salt and sweetener to a blender (Vitamix is my fav!) and blend until creamy smooth. Taste for sweetness, as traditional shakes are super sweet (but if using keto you likely need a lot less sweetener)

Add in ice and blend until thick and creamy, adding a little water as needed. Do not over-blend, or you’ll lose thickness and coldness. Enjoy right away with a generous helping of homemade whipped cream.
