MY MORNINGS ARE CRAZY busy! My daughter’s bus pickup time is so crazy early, and she’s not a morning person-AT ALL. So, I am always trying to get her to eat something between getting ready for school. It’s a battle, because she just wants to get up in time to throw on her uniform, brush her hair, and go.
So, usually I try to whip up a smoothie or juice for her to take along. She’s pretty cool with that, but sometimes she wants something to chew too. I saw a lot of recipes online for breakfast cookies and wondered just how nutritious they were.
I finally found a Paleo version that I was okay with and it passed her picky taste as well (she dug into the bag the first day after school, so I knew it was a hit).
If you have a picky breakfast eater, try this Paleo Breakfast Cookie!
Ingredients
- 1 cup almond flour
- ¼ cup coconut flour
- 1 tsp baking soda
- ½ tsp sea salt
- 1 tsp cinnamon
- 1 cup zucchini shredded
- 2 TBS coconut oil measured in it’s solid state
- 3 TBS almond butter
- ½ cup coconut sugar
- 1 egg
- ½ cups chocolate chips
Instructions

Preheat oven to 375 degrees F.

In a bowl, mix together dry ingredients & set aside.

Put zucchini, coconut oil, almond butter and coconut sugar in your blender or food processor.

Blend ingredients together until smooth.

Add egg and blend until combined.

Pour wet ingredients into dry ingredients and mix very well.

Add chocolate chips.

Scoop a tsp sized cookie dough ball onto cookie sheet lined with parchment paper.

Bake for 10-13 minutes until cookies are slightly browned.

Let the cookies cool on the baking sheet for at least 5 minutes.
