MONDAY IS MY HARDEST day of the week. Yes, I know you’ve heard this a million times from every 9-5 Monday-Friday working person. I don’t fit that norm work wise-I work when I want-but, I just can’t shake hating Mondays.
So, come Monday, I like to treat myself in some way. But, I’m not stupid about it. When I feel like a treat, I have my secretly healthier treats that don’t taste like it. Like, these melty chewy Keto Chocolate Chip Cookies!
Some foods just bring up memories, and for me chocolate chip cookies are one of those.
These cookies don’t even use flour, and instead uses almond butter.
The almond butter gives a bit of sweetness to them, but I used Lakanto Granulated Sweeter as well.
Keto Chocolate Chip Cookies
Ingredients:
1 Egg
1 cup Almond Butter
1/2 cup Lakanto Granulated Sweetener
1 tsp. Baking Soda
1 cup Chocolate Chips
Coarse Sea Salt, if desired
Directions:
Preheat oven to 350. Grease a cookie sheet and set aside.
Add egg into a bowl and mix lightly. Add in the almond butter, baking soda, sweetener, and mix together well.
Fold in the chocolate chips.
Scoop the dough onto the baking sheet.
Bake for 9-12 minutes. DO NOT overbake these. They will look underdone when you take them out of the oven, but they will firm up as they cool.
Keep cookies in airtight container.
